Fresh salsa is our jam. The great thing is, you just can’t mess it up. Any assortment of veggies (and fruit!) with a little lime and salt will qualify. This fresh blend of creamy and crunchy is the perfect compliment to a flavorful marinated protein.

Ingredients

  • 2 large avocados
  • 1 jicama
  • 1 poblano pepper
  • 1/2 small onion
  • 1/4 cup cilantro
  • 2 limes, juiced
  • 1/2 tsp salt

Instructions

  1. Chop all veggies into 1/4" chunks and roughly chop cilantro.

  2. Combine vegetables, lime juice, and salt. Gently mix ingredients (careful not to mash up avocados).

This salsa is perfect for a quick summer meal. We love to make tacos with it -- cook up some meat, add salsa, and done!
