Brussels sprouts have massive amounts of Vitamin K (1 serving =195% of daily value!) and Vitamin C (125%dv). A randomized controlled trial showed that brussels sprouts also aid in detoxification and reducing oxidative DNA damage. ⠀
There are lots of great ways to cook brussels sprouts but be mindful not to overcook and lose the nutritional value. They are also great raw when sliced thinly with a mandolin or food processor and added to a slaw or salad!⠀
Ingredients
- 3 slices bacon chopped⠀
- 1 pound brussels sprouts halved⠀
- 4 tbsp organic feta cheese⠀
- 1/2 cup freshly squeezed orange juice⠀
- 1/2 cup water⠀
- 2 tbsp orange zest
- real salt & freshly ground pepper⠀
Instructions

Saute chopped bacon in your Instant Pot (add a little avocado oil or reserved bacon grease if the bacon isn’t releasing fat fast enough) for 4-5 minutes or until crisp. Remove from pot and save for garnishing.

Stir orange juice and water into pot to deglaze and add Brussels sprouts.⠀

Seal the lid and choose the manual setting and adjust time to 3 minutes. Quick release the pressure when completed.

Transfer sprouts to serving dish, season with salt and pepper and garnish with bacon, feta, and feta cheese.
